A personal favourite vineyard, this time without maceration. Grey and blue marls atop some serious limestone. Chalky and lactic on the nose, before a crisp, orchard-led palate. I can’t quite put my finger on what makes my pulse race so much about Valentin’s work. Rock solid and incredibly stable too, I tasted on day 4, and it was superb. Watching this evolve over a few days should be a real treat. ABV: 12%
