Thomas's family have farmed this tiny 2.5ha estate in Chamery for generations, growing cereals alongside vines (hence the wheat sheaf on the label). His parents broke from the co-op in the early 80s, invested in a traditional Champagne press, and started making their own wine with quality front of mind. By the late 90s they'd moved to ploughing between vines only, leaving natural cover crops to restore balance to the soil. Then in 2003, an internship with biodynamic growers in Burgundy properly opened Thomas's eyes, he came back determined to let the fruit speak for itself.

The domaine spans 7 crus across Chamery's amphitheatre of slopes, each with their own soil and exposition. Fully certified organic since 2012, Thomas now focuses on single vineyard wines, barrel aged for at least 9 months (228l and 500l) with minimal to no sulphur added.
