IYKYK pink wine. Cult-y. 25 year old vines on shallow soils of grey schist, rhyolite, and sand. Fermented cool in stainless with native yeasts for two to three weeks, then a short spell in tank to settle before bottling.
Bone dry and insanely refreshing. A little texture but no malo, so still cutting and tense. Gastronomic, with red apple and cherry layered with a smoky, mineral edge. Stock up whilst you can. ABV: 12.5%
