Sylvie organises La Dive Bouteille, the celebrated natural wine festival held annually in the Loire Valley. Fair to say she knows a thing or two.

In her own words: "A natural wine is simply grapes fermented with the yeasts from their terroir. That means you add nothing to hinder their expression. Yes, this approach can become a philosophy. In any case, it's a commitment, a revolutionary act, since it's a big risk. You can lose a whole year's work."

A sentiment we're very much behind. Sylvie owns a small 1.5 hectare vineyard at Le Thoureil, sitting equidistant between Saumur and Angers, co-planted with Chenin Blanc, Cabernet Franc, Grolleau, and Pineau d'Aunis.
