Their calling card is reductive winemaking. A slow press followed by long ageing, undisturbed, on the lees, results in wines with a trademark note of gunflint. Whilst this style has now become more popular, these were the originators. Married with the richness and generosity typical of Chassagne, this has become the reference point for Burgundy in the 21st century. Whilst their main focus is Chardonnay, the reds also fly under the radar. 30% whole bunch, gentle extraction, for light, bright wines with plenty of Pinosity.
