Pheasant`s Tears, Poliphonia 'Amber' 2022

This isn’t your typical Georgian wine and definitely not your typical amber. Think dark rosé or maybe a very light red. Blouge? Co-ferment? Honestly, I’m not sure what to call it… other than downright delicious. It’s a super harmonious field blend of a lot of indigenous varieties from a micro library plot with the cuttings coming from the Georgian Ministry of Agriculture. How many? Around 150, but who really knows? Not me. What I do know is that it’s bursting with juicy raspberries, lime, and a crack of white pepper. There’s a touch of volatility that lifts everything in just the right way, making it dangerously refreshing. It’s tasty. It’s got a cool backstory. It’s an absolute steal. ABV: 12%
