Muri is a Copenhagen-based no and low alcohol project founded by a former Empirical Spirits distiller and Noma alum. The aim here is to create serious, considered alternatives to wine. Their drinks are built through a blend of fermentations, using a complex selection of fruits, flowers and botanicals to achieve a depth, structure and balance that mimicks what you'd find in the best wines and spirits.

At the heart of Muri’s process is a commitment to real produce. That means only wild botanicals, fresh fruits and vegetables are sourced from small-scale farmers, with no concentrates or flavourings. Complexity is developed through multiple fermentations, unusual yeast strains, sourdough starters, kefir cultures and techniques borrowed from some of the world’s most inventive kitchens and labs!

Muri is small scale, with fermentation through to bottling handled in-house at their Copenhagen blendery. Each ingredient is treated with care and these intricate recipes create drinks that aren’t just substitutes for wine, but expressions with a clear identity of their own.
