Lambrusco with age? I'm telling you, Claudio is not messing around. Making a very strong case that Lambrusco as a style deserves to be taken seriously. Lambrusco Grasparossa given a short maceration, the free-run moved to steel to finish the ferment, then refermented in bottle with grape must of the same variety and held back until primed and ready. Savoury and balsamic, mature and grown up. Still a core of ripe fruit, but things are now focused on a unique minerality I've not previously encountered in a sparkling wine and cola-esque herbal thing. This and a hunk of aged cheese? Just stop it.
