Returning to Germany, Nikolas balanced his banking career with completing his wine degree. In early 2020, grower friends in Savigny offered him cellar space and access to exceptional fruit. From 1,200 bottles across three appellations, he has never looked back. Today, he maintains long-term contracts with select growers across seven appellations covering 1.6 hectares, producing roughly 7,000 bottles in favourable years.
