Grape: Pinot Noir + Pinot Gris
Vibe: Mineral
Pinot Noir and Gris that are both directly pressed, albeit slowly and gently, so we get a little blushed hue yet no tannin. I'm still calling this a white wine. You call it what you like, but you can't argue this doesn't absolutely slap. Aromatically we've got florals and raspberries whilst the palate feels all taut and mineral, dry and chalky but with an honeyed note going on too. A killer bistro wine. Who's cooking me a choucroute?
