Kissinger-Bähr, Hipping Kabinett 2024

The intention here was always to focus on dry wines, but in 2024 some fruit from their famed “red slopes” was pre-harvested to capture the tension they were after in the cellar for the dry wines. From this, they made a one-off, off-dry bottling! 40g residual but far from cloying due to such wicked acid.
The red clay and slate soils of the Roter Hang give the variety a completely different expression. Even the fruit seems to lean into red apple, alongside white florals, chamomile and a touch of celery salt. One of the most distinctive Kabinetts I have tasted. Just 24 bottles made it into the country; six are in our possession, and they will not be around for long. ABV: 8.5%
