Kevin Bouillet is a young winemaker in the Jura who set up his winery in 2018, combining recovered plots from his family’s holdings with vines sold to him by retiring farmers. He has four hectares in total, all in Pupillin, and has worked organically since the beginning. He grows the big Jura five: Chardonnay, Savagnin, Poulsard, Trousseau and Pinot Noir, as well as a rare, low-yielding Chardonnay bio-type known to the locals as ‘Melon with red tail’. These are cracking wines from an exciting newcomer to the region, and they’re also banging value. Get on it!
