Giuseppe Cipolla farms two vineyards on Sicily's south coast, about 25km from Agrigento, on old mining land where chalk and sulphur give the soil plenty of lovely organic matter to balance out the intense Scilian sunshine.Working in the way we like, organic, no filtration, indigenous yeasts only. Vines are trained Alberello or Tendone to fight the heat and keep yields low. He's got a soft spot for the Jura, which shows up in the salty, slightly oxidative Solfare and the brightness running through his reds.
