As we come into summer my Champagne cravings turn towards all things Blanc de Blancs. Chardonnay and its inherently racy acid lines, when picked with care, make for invigorating bubbles that I just don't want to put down. Especially when the sun is shining. Calsac is causing a bit of a stir, and I'd heard plenty of good things before tasting. After tasting, I knew I needed this on the shelves. Plenty of citrus zest and crunchy green apple fruit, whispers of white florals, grounded by an instantly satisfying almost chalk-like minerality. Elegant, and at this price point for grower fizz, very hard to ignore. Disgorded 11/25. ABV: 12.5%
