Starting in 2012 with 5 hectares of vines inherited from Edouard’s father, Patrice, Eleni and Edouard Vocoret are young winemaking partners right at the forefront of a vibrant new generation for Chablis. Eleni also received mentorship from the legendary Vincent Dauvissat, and the couple have sought to develop wines that aim for a similar level of terroir expression. Classic stony, salty flavours are foregrounded as well as a beautiful texture - attained through the use of old oak barrels for élevage as opposed to the stainless steel typical for Chablis. After only five vintages they are already making some of the region’s most highly regarded wines - watch out, they might get even better!
