Sweet wine simply doesn’t get more delicious. Again, because this comes in 0.5% short of the mandatory 14% required for the appellation, it’s technically not Vin de Paille. Bureaucracy at its finest.
Speaking of finest. These grapes are harvested before all others, and their condition has to be perfect. They’re then placed on wooden racks and stored in the attic. After a minimum of six weeks of dehydration, they’re brought down and pressed, starting a very long fermentation that lasts at least one year. This nectar is then aged in Burgundy barrels for three years.
As such, this is suitably succulent, but with an acidity that keeps you coming back for more. You definitely shouldn’t have more than a glass of this; you definitely will. ABV: 13.5%
