A step up in complexity. This is a single-parcel bottling that’s spent two years in barrel in Pierre Gauthier’s pristine caves. These caves are hard to describe, but the temperature never fluctuates. On my recent visit, they provided a cooling respite when outside temps hit 35 °C. There is simply no better place for wine to mature or for you to cool down. Here, the fruit has darkened and is starting to concentrate. The savoury graphite note is starting to peek through alongside a bit of menthol. It’s still fresh and fun now, but things will only get better with time. Having been lucky enough to taste a ’17 and even a birth‑year magnum, I can tell you: this is just the beginning. ABV: 13%
