Domaine de la Cras is a 160-hectare vineyard purchased by the city of Dijon, who held an open call for proposals for the vigneron who would take the reins. Marc Soyard, from a non-winemaking family in the Jura (those exist?!) was the lucky chosen one, and runs the vineyard organically with some biodynamic principles sprinkled in. All winemaking is done with natural yeasts and minimal sulphur adds. The wines technically fall under Bourgogne AOC, but Soyard alone is allowed to use the appellation Coteaux de Dijon. Flex!
