Alice and Olivier de Moor live in a small village near Chablis, and their wine cellar can be found underneath Olivier’s grandfather’s house. Their Chardonnay has none of the under ripeness often found in the area, and is also notably free of the gunpowder aromas associated with an excess of sulfur. It is Olivier’s belief that in days gone by, Chablis was a buttery, nutty wine like any other reasonably ripe Chardonnay. The pair also plant Aligoté and Sauvignon Blanc. They’ve worked organically since 2005, a rare occurrence in their region, and use no SO2 at harvest or during vinification.
