Poire of the highest order. A mix of roughly 25 old varieties bringing both balance and finesse, all from untreated century-old trees at the Premoudière farm. There is something so unique about Jacques' work. These feel so far removed from any fruit ferment you'd find here in the UK. Vinous, classy, and it's no surprise they're poured plentifully in some of the world's best restaurants.
