Claude Courtois of Les Cailloux du Paradis has 13 hectares of previously abandoned vines in Soings-en-Sologne near Cheverny which he tends biodynamically, cultivating cult sulphur-free wines from varieties including Romorantin, Pineau d'Aunis, Côt, Pinot Noir and many others. The wines are fermented spontaneously, long and slow, and bottled without racking, fining or filtration.
