When one talks of Chassagne-Montrachet it is impossible not to mention the name Moreau. Year, after year this producer vinifies some of the purest and most compelling wines of the appellation. Opting for a hands-off approach, pruning is used to keep yields low and harvests are done by hand. No pesticides or herbicides are allowed, and only the occasional spray of organic fertilizer is used. Similarly in the cellar, indigenous yeasts kick start the fermentations and the wines are bottled without filtration, however they do see a light fining.
