Blanc de Noir of this quality would be eye-watering if we were in that little wine region next to Reims. Things don't get that silly round in this neck of the woods. Just don't tell too many people about this secret. Two-thirds fermented in stainless steel, one-third in amphora, before 10 long years on the lees, disgorged in 2025. We've got creaminess and texture, biscuity and brine. The volcanic minerality, after 10 years, is now right at the fore. An absolute steal considering just how long it's taken to get here.
