The winery began in 1984, when George’s grandfather Alexander Wolski built a small family cellar in Khashmi. He made natural wine for the table, using organic vineyards and nothing added. George grew up in the cellar, helping his father and grandfather whenever he could. All fruit comes from organic, non-irrigated vineyards. No fertilizers. No additives, including sulfites. Yields are low, grape selection is strict, and only free-run juice is used. The wines are bottled unfiltered, with nothing taken away and nothing put in.
