Domaine George Descombes
The Descombes winery is tucked up in the Vermont hamlet of Villié-Morgon, overseeing a now sprawling 15.5ha of vineyard holdings spread over Morgon, Brouilly, Regnié, Chiroubles and Beaujolais-Villages.
Georges took over his fathers estate in 1988 and immediately set about shifting the viticultural and winemaking practices toward organics and minimal intervention. Farming was once upon a time certified (Ecocert) but now, as is becoming the norm, is simply practicing organic. In the winery the use of sulphur during the winemaking process is minimal (or non-existent where possible) and there is no filtration. Georges bottles with a miniscule dose of SO2 (less than a hundredth of what an organically certified vigneron is legally allowed to use) to ensure stability.
Where the practices of Descombes differ from the other esteemed producers in the region (Foillard, Lapierre, Breton etc) is an extended cold maceration prior to ferment, as well as extended maturation prior to bottling, followed by time in bottle before release.
The resulting wines are of extreme purity as well as stability, the work done the cellar allowing the wine to settle and begin to evolve in perfect conditions before shipping.
