Paul-Henri Thillardon started his domaine in Chénas in 2008, building it up to twelve hectares of vines, some of which are 100 years old. He was joined by his brother Charles in 2014, and together they slowly converted all the vineyards to biodynamics. The wines are made using whole bunches and no added sulphites, and there’s no punching down or pumping over. Though Chénas’ reputation is for a firmer style of Beaujolais, the Thillardon wines remain precise and elegant.
