Clue's in the name, or at least it is if you're a Francophone. Chardonnay that took its sweet time, with a long, slow 36-month elevage in demi muids. Patience is a virtue for this exact reason - the result is deep and layered, full of rich pastry notes. A beautiful Jurassic expression with years ahead of it, if you can wait that long. ABV: 12.5%
