Two winters in barrel. How I like all my white wine to be handled. Obviously, this is a rarity, time is money and all that, but the result always pays dividends. The fruit pulls back, time revealing a more mineral expression. This is an ultra-delicate bottling, with lily-esque florals and stone fruit at first, giving way to a magical mouthful of citrus, chalk and honey. Drink it now or leave it alone for a few years; either way, this is a stunner.
