All fruit is hand destemmed, cold soaked to get some colour out and then left for 14 days to ferment, before heading to stainless steel for a rest. No oak, ever. Nada. Sits in tank, nothing added or removed, none of the usual tricks or racking. Just left to rest. The resulting wine is pretty bloody good. A mix of mineral drive, restrained fruit and purity of texture. One to savour. ABV: 12%
