Just a mere 600 bottles of this were made, and even less made its way over to the UK. Rare as. Ribolla and Fiano were co-fermented before a two-month soak on their skins. The wine then spends a bit of time in, you guessed it, amphora for 18 months before being bottled unfined, unfiltered, and with no sulphur. Dried fruit and herbs galore, firmly structured and bursting with umami-esque complexity. ABV: 12.5%
