Rosé Champagne isn't usually my bag, but this one is proper. JM experimented with both permitted methods for making it (maceration and blending white and red wines) before deciding to use both to make this stonking, unique bottling. Extra Brut rosé is pretty rare, giving winemakers often up the dosage to cover up other imbalances, but not necessary here. This is lightly floral and subtly red fruited, creamy with a tiny touch of tannin coming from the blended still Pinot. A wine that'll change your mind about pink Champagne, like it did for me. ABV: 12.5%
