Souillard's whites are old school in the best possible way. He allows for a bit of oxygen at the start of their lives to ramp up the rich fruit Roussanne brings from an old, small vertical press. This also draws out a faint whisper of tannin and bitterness to help with the age-ability... I think he might be onto something, I can't wait to watch this go all honeyed and golden. ABV: 13%
