Going up a gear here. This comes off two plots in the most northerly point of the appellation, one at the top of the hill with the other at the bottom for the ultimate balance. The usual whole bunch treatment is followed by a bit of pumping over. We're left with a savory delight that is immediately delicious. If you've got the patience, I'd be watching those tannins soften with a few years bottle age. ABV: 12.5%
