Continuing a family tradition which dates back to the 16th century, Hélène Jaeger-Defaix is the current custodian of the domaine’s premier cru and village vineyards in Rully, (Côte Chalonnaise, southern Burgundy). She farms organically with minimal use of sprays and, wherever possible, uses no sulphur or copper at all. Slow, gentle pressing ensures top quality juice and aging in 1-5 year old barrels adds complexity and smooths things out. The resulting wines are very pure, vibrant expressions of red Burgundy - and unusually for this region, very good value. Très bien!
