Henri Chauvet is one to watch in the Auvergne and this bottle is a testament to the hype he is stirring up. Salt, sesame, bitter lemons, with a nice vein of acid running throughout. Delicious drinking now, I can only imagine how this will be a few years down the line. Doubt I'll have the patience to wait and see. ABV: 12%
