Riding that fine line between skinsy and white, 1/3 of the grapes for Timotheus are macerated for three weeks with the remaining 2/3 being directly pressed, before they all meet again in 500l barrels, mature together for a year and then go to bottle. Plenty going on here, from florals and spice to a plethora of fruit, running the gamut from green apple to melon to blood orange, with a hint of almond in there too. ABV: 12.5%
