One of Sancerre's finest producers, Gérard Boulay has 11 hectares of densely planted vineyards located on southern facing slopes overlooking Chavignol. The primary goal is not to express the grape variety, but the limestone-rich soils of the site. The soil here is kimmeridgian marl - the same soil found in the greatest sites in Champagne and Chablis. The blend of limestone and clay offers the balance of conflicting forces: the limestone adds freshness and zip, whilst the clay brings roundness and depth. Using natural fermentations, hand harvested grapes and only minimal sulphur when necessary Boulay's wines are a must try for even the most sceptical Sauvignon Blanc drinker.
