Thomas Pico started Pattes Loup in 2004. The project is named after a vineyard he planted in the lieu-dit which he inherited from his grandmother, who he was very close to. Based in Courgis, he works meticulously in the vineyards - farming is organic and harvests are done by hand. After minute yields between 2015 and 2017 Thomas decided to experiment with extending ageing. The resulting wines reached a newfound level of complexity and thus from 2018 this became the norm. These are truly chiselled expressions of Chablis.
