Like many of the greats, Hubert Chavy didn’t know what he had. He was selling off his grapes to négoce operations before his son Romaric intervened. Now they bottle almost everything they grow. The family make wine in and around Puligny-Montrachet in the Côte de Beaune, on several Premier Cru plots. They don’t use pesticides or herbicides, and do zero lees stirring to keep the wines pure. They bottle their wines unfined, usually with only light filtration if deemed necessary, and the resulting product is full and rich, balanced by beautiful freshness. Can’t believe they used to sell their stuff off! Big up Romaric for nipping that in the bud.
