Treviso, Italy has become synonymous with mass produced Prosecco, but Ernesto Cattel has been leading a renaissance here since 2006. To keep up with the world's insatiable demand for cheap fizz, the harder to spray older vineyards in the hills quickly became abandoned. For Ennesto he saw it as his mission to reclaim these forgotten sites in order to preserve the area's agricultural traditions. All the wines are vinified by parcel and labelled according to altitude. Some wines see a short time on skins and after the first fermentation is complete the wines are bottled with an addition of must to kick start the secondary ferment. No disgorgement takes place, so expect plenty of haze and sediment. Whilst looking a little gnarly, these wines are all the better for it.
