He works with Chardonnay, Semillon, Pinot Gris and Merlot, sourcing grapes from organic growers in Adelaide Hills. Grapes are picked early for freshness, with a good spell on skins for the whites to add texture, and shorter maceration for the reds to keep things light and zippy.
