Based in the village of Bouzy in the Vallée de la Marne, Benoît and Valerie Lahaye produce an amazing array of site-specific Champagnes. They work together along with their two sons and a beast of horse called Tamise who merrily ploughs the vineyards. The Lahayes farm biodynamically, which they say really helps increase ripeness levels whilst also retaining acidity. Benoît is always keen to experiment - for instance isolating indigenous yeasts from different vineyards, fermenting individual barrels of the same wine with them, and looking for differences in the resulting flavour profiles. These guys produce a staggering range of styles - Lahaye even makes a single vineyard blend of all 7 permitted Champagne grapes plus tiny amounts of grapes like Teinturier, Fromenteau, Gros Plant, and others unknown even to them! These are deep, intense, terroir driven wines – get stuck in!
